I meant to reply earlier, but I wanted to make sure I actually tried that recipe before saying anything. I followed the steps almost exactly, except I left it in the oven a little longer because mine always runs cool.

The texture turned out better the second day, which surprised me, and I think letting it rest made more difference than anything else. I also used less salt and added a squeeze of lemon at the end, which gave it a brighter finish without making it too sharp.

I tried the new route you mentioned and it was actually much better than the main road. It took a few extra turns at first, but once I knew where to go it felt calmer and a lot less stop and start.

I think the best part was that I didn’t arrive already annoyed, which usually sets the tone for the rest of the afternoon. I also noticed that leaving ten minutes earlier helped more than I expected. It gave me enough breathing room that I wasn’t checking the clock the whole time.

Next week I’m going to test it again on a different day just to see whether it is consistently easier or if I just got lucky. If it still feels smooth, I’ll probably make it the default.
