Yeah I finally got around to trying that new hiking trail up north and honestly it was way better than I expected. The elevation gain was pretty gentle so it didn't feel like a workout but you still got those amazing views at the top. We brought a picnic and just hung out for a couple hours. I've been experimenting with sourdough starter from scratch and it's been a fun little project. The first couple tries ended up pretty flat but I think I finally got the hydration ratio right and it actually rose this time. My kitchen counter is covered in flour most days now but my family doesn't seem to mind since fresh bread keeps appearing. I tried adding some herbs and garlic to one loaf and it turned out surprisingly good. The trick seems to be keeping the starter at a consistent temperature instead of letting it get too cold overnight. I read that you can also use discard for crackers and pancakes so I might try that next. Anyway if you ever want to borrow my bread lame or banneton just let me know. It's been a fun way to spend a few hours on weekends and the results are getting better each time. I found a local farm that sells organic rye flour which adds a really nice depth of flavor compared to regular all-purpose. Still learning but it's been a rewarding little hobby.
