I think the key is to let the meat rest properly before slicing into it. If you cut too soon all those juices run out onto the cutting board instead of staying in the meat. I usually wait at least five minutes for steaks and longer for roasts. The temperature also matters a lot. I pull them off the heat a few degrees early because they keep cooking while resting. For veggies I like to toss them with olive oil and herbs before roasting. The high heat caramelizes the outside nicely. Just spread them in a single layer so they brown instead of steam. I was thinking we could do a potluck style gathering next weekend. Everyone brings a dish and we just relax in the backyard. The weather forecast looks good for Saturday afternoon. I can set up some tables and chairs and handle the drinks. If people want to bring side dishes that would be great. I will make a main course and maybe a dessert. Let me know what you think about the timing. We could start around mid afternoon and let it go into the evening. That way everyone can come and go as they need to. I will send out a message to the group to see who is available. It has been a while since we all got together so this should be nice. Let me know if Saturday works for you or if another day would be better. I can adjust the plan based on what works for everyone.
