I finally got around to testing that sourdough starter recipe you sent me last month. It took about ten days to get it really active and bubbly. The first loaf I made was a bit dense but the flavor was excellent. I think I need to work on my shaping technique and maybe let it proof a little longer.

For the next attempt I am going to try a higher hydration dough to get more open crumb structure. I also found that using filtered water instead of tap water made a noticeable difference in how the starter responded.

The baking schedule takes some planning since you have to feed the starter a few hours before mixing the dough. But once you get into the rhythm it becomes pretty manageable. I am going to try adding some whole wheat flour to the next batch for a nuttier flavor profile. Let me know if you want to swap baking notes sometime.
