I think the key was letting the dough rest overnight in the refrigerator. That extra time really helped develop the flavor and made the texture much lighter than when I tried it the same day. I'd suggest giving it at least eight hours if you can wait that long. The sauce turned out a bit thinner than I expected so next time I might reduce it a bit more before adding the cream. Let me know how yours goes and if you find any other tips I should try for the next batch. I also used a different brand of flour this time and noticed a subtle difference in the final result. The trail we took last weekend was about eight miles round trip with a moderate elevation gain. We started early in the morning to avoid the heat and brought plenty of water and snacks. The views at the top were worth the climb especially with the autumn colors starting to show. We saw a few other hikers on the trail but it wasn't too crowded. The path was well maintained with only a few rocky sections that required some careful footing. I'd recommend wearing sturdy boots with good ankle support if you plan to try it. We stopped for lunch at the summit and spent about an hour just taking in the scenery before heading back down. The descent was easier on the knees but we still took it slow to avoid slipping on loose gravel. Overall it was a great day out and I'm already looking forward to the next one.

We also spotted a pair of hawks circling overhead near the ridge line which was pretty impressive to watch. The weather cooperated nicely with mostly clear skies and a light breeze that kept the temperature comfortable throughout the hike. If you decide to go I'd suggest checking the trail conditions beforehand since some sections can get muddy after rain.
