I was thinking about the best way to roast vegetables for dinner. I've found that tossing them with olive oil and herbs like rosemary and thyme works well. The key is to cut them uniformly and spread them out on a baking sheet. Roasting at 400°F for about 25 minutes usually does the trick. I also like to add a little balsamic vinegar towards the end for a nice glaze. Let me know if you have any good recipes to share. I've been experimenting with different seasoning blends.
