Yeah I tried that mushroom risotto recipe you sent me last week. It turned out pretty well actually though I think I added too much broth at the beginning so it took longer to cook down. Next time I'll go a bit easier on the liquid and maybe toast the rice a little longer before adding the wine. The texture was still creamy but just slightly looser than I wanted. I also threw in some fresh thyme and a bit of lemon zest at the end which really brightened it up. My partner said it was one of the better ones I've made in a while so that's a win. I'll probably make it again for the dinner party next month but I'll do a test run first to dial in the timing. Honestly I finally watched that documentary you recommended and I get why you were so into it. The cinematography was stunning especially the aerial shots of the coastline. I didn't expect the narrative to take that turn in the second half though I thought it would stick with the environmental angle longer. The human story at the center really carried it for me. I've been thinking about it for days now which is usually my sign that something landed well.
