Yeah, the pasta turned out really well. I used a mix of semolina and all-purpose flour which gave it a nice texture. The key was letting the dough rest for about 30 minutes before rolling it out. I have been experimenting with different sauce combinations and this time I went with a simple garlic and olive oil base with some fresh basil from the garden. The trick is to not overcook the garlic or it gets bitter. I added a splash of pasta water at the end to help the sauce emulsify. Next time I might try adding some lemon zest for brightness. Let me know if you want the exact measurements I used.

Also, I found that using a kitchen scale rather than measuring cups made a big difference in consistency. The hydration level of the dough is really important and weighing the ingredients takes the guesswork out of it. I have been making pasta about once a week now and each time I learn something new. The last batch I made with whole wheat flour was also pretty good but had a denser texture. I am still working on getting the right thickness when rolling by hand.

We are planning to have a small get-together next Saturday afternoon. Nothing too formal, just some friends coming over for food and games. I was thinking of setting up a few tables in the backyard if the weather cooperates. We will have some classic board games and maybe a card game or two. For food, I am planning on making a big batch of chili and some cornbread. A few people offered to bring sides and desserts so it should work out well. I need to figure out the seating situation though because we only have about eight chairs.
