I tried that recipe you sent last week and it turned out really well. The key was letting the sauce simmer for at least 30 minutes like you said because it really brought out the flavors. I added a bit more garlic than called for but that's just my preference. Next time I might try it with the alternative ingredient you mentioned to see how it compares. The whole process took about an hour from start to finish which felt reasonable for a weeknight dinner. I will definitely be making it again. Let me know if you have any other recipes you recommend because I am trying to expand what I cook regularly. Also I found that prepping all the ingredients beforehand made the cooking process much smoother so I will do that again next time too. I think the key is taking it step by step and not rushing.

One thing I learned is that letting the dish rest for a few minutes before serving helps the flavors settle. I used a heavy pan which seemed to distribute the heat evenly. The leftovers reheated well the next day which is always a good sign. Let me know if you want me to bring it to the gathering next weekend. I can adjust the spice level depending on what everyone prefers.

I finally got around to organizing the garage shelves this weekend and it made a bigger difference than I expected. I used the storage bins we talked about and labeled everything so I can actually find things now. The whole project took about three hours but I spread it out over two days. I still need to sort through the old paint cans and decide what to keep but that is a project for another weekend. Having everything in its place makes the space feel much larger and I can actually park the car in there now. Let me know if you want to borrow any of the tools I came across while sorting because I found a few duplicates that I probably do not need two of.

I also rearranged the workbench area so there is more room to spread out when I am working on small repairs. The pegboard I installed last month really helps keep frequently used items within reach. Next on the list is adding better lighting above the workbench because the existing fixture is not bright enough for detail work. I found a good LED option that should work well. Let me know if you want me to send you the details on that. I can also help you tackle your garage if you ever decide to take on the project.
