Oh, I totally get what you mean about the sourdough starter! I tried to make one last week and it was a complete disaster. My kitchen looked like a flour bomb went off. I had flour on the ceiling, I swear. How does it even get up there? Anyway, I found this no-knead recipe that is way more forgiving. It just sits on the counter for 18 hours and you bake it in a dutch oven. The crust comes out perfectly crispy and chewy. You should definitely try that one first before diving into the starter world. Let me know if you want the link to the recipe! I also tried making bagels from scratch. They were dense, but pretty tasty. It is quite a workout kneading that dough though. Let me know if you ever want to have a baking day together. Hey, have you seen that new documentary series about the history of video games? It is surprisingly well done. They start all the way back in the arcade era and go through the console wars.
