the eagle lake trail conditions were good this past weekend with only a few muddy spots near the creek crossings. we started around 6:45 and had the trail mostly to ourselves until about 9am. the elevation gain is steady around 1200 feet with plenty of spots to rest. the lake at the top is stunning with clear water and mountain reflections. we spent about 45 minutes there just taking it in.

the trail is well marked so navigation is easy. sturdy shoes with good traction help on the loose sections. the parking lot fills up by 9 on weekends so an early start is a good idea. there are restrooms at the trailhead but nothing on the trail. overall it took us about 4 hours round trip with the stop at the lake. the weather was perfect with mild temperatures and a light breeze.

we saw deer and several bird species along the way. the wildflowers are starting to bloom which made the scenery even better. i would recommend this hike to anyone looking for a solid workout with a great payoff at the top.

the pasta recipe you asked about is really straightforward and cooks up fast. i used whole wheat spaghetti instead of regular and it worked perfectly. the method is to saute minced garlic in olive oil until fragrant then add halved cherry tomatoes and cook until they blister. toss in the cooked pasta with a splash of pasta water to create a light sauce. fresh basil and a squeeze of lemon at the end brighten everything up nicely.

i added toasted pine nuts for texture and a pinch of red pepper flakes for a bit of warmth. the whole thing takes about 20 minutes from start to finish. the cherry tomatoes i used were from the farmers market and they were exceptionally sweet and flavorful. i think this dish would also work well with zucchini ribbons or roasted vegetables added in.

leftovers reheated well with a splash of water to bring back the sauce consistency. let me know if you end up trying it and how it goes for you. i have been enjoying cooking more at home and this recipe is a great addition to the rotation.
