Thanks for asking about the best hiking trails around here. I have been exploring quite a few lately and can give you some solid recommendations.

The Ridge Trail at Mill Creek Park is probably my favorite right now. It is about 4 miles round trip with some moderate elevation changes that keep things interesting without being too exhausting. The views from the lookout point are really nice especially in the morning when the light comes through the trees.

If you want something easier the Creek Loop Trail is only 2 miles and mostly flat with lots of shade. I would suggest bringing plenty of water and maybe a light jacket because it can get breezy near the water. Parking at the main lot has been fine on weekdays but weekends get crowded pretty early.

About that bread recipe you asked about I have been using this no-knead method for a few months now and it works really well.

The key is letting the dough rest for at least 12 hours at room temperature. Mix three cups of flour with a teaspoon of salt and a quarter teaspoon of yeast then add one and a half cups of water and stir until it comes together. Cover the bowl with plastic wrap and leave it on the counter overnight.

The next day turn it out onto a floured surface and fold it over itself a few times then let it rest for another half hour. Preheat your oven to 450 degrees with a Dutch oven inside. Drop the dough carefully into the hot pot and bake covered for 30 minutes then uncovered for another 15 minutes.

The crust comes out perfectly crispy and the inside is soft with nice air pockets. I have been making this every weekend and experimenting with adding herbs or cheese sometimes. Let me know how yours turns out if you try it.
