Actually I think I mentioned this before but we ended up going with the hiking trail near the reservoir instead of the one along the river. My friend said the river trail would be too muddy after all the rain last week and she was right. We parked at the lot just past the old bridge and started around 8 in the morning. It was still pretty misty but the sun burned through by 10. The trail was mostly gravel with some rocky sections near the top. We brought sandwiches and sat on a big flat boulder for lunch. She told me her kid started kindergarten last month and loves it which is such a relief because she was worried about the separation anxiety. I said give it a couple weeks and he will be reminding you to leave on time. We laughed about that. On the way back we saw a deer crossing the path maybe forty feet ahead just standing there staring at us. We stopped and waited and after maybe a minute it wandered into the trees. I forgot how good it feels to be out in the quiet like that. My phone barely got any signal up there which honestly was a nice break. I should make that a more regular thing even just once a month. There is something about being outside that clears your head better than anything else.

Oh I finally tried that sourdough starter recipe you sent me last month. I kept putting it off because it seemed like a lot of work but honestly it was simpler than I expected. Day one I mixed the flour and water and left it on the counter. By day three it was already bubbling. I fed it twice a day like the instructions said and on day five I baked my first loaf. It came out a little dense but the crust was amazing and my roommate ate half of it in one sitting. I forgot how good fresh bread smells when it is baking. The whole apartment smelled warm and toasty. I have been feeding the starter every day since and I am planning to bake another loaf this weekend maybe with some rosemary and sea salt on top. I think next time I will let it proof a little longer to get a more open crumb. There is something really satisfying about making bread from scratch like you are doing something ancient and useful at the same time. I can see why you got so into it. Thanks for the push to try it. I am already thinking about what else I can make with the discard like crackers or pancakes. Let me know if you have a favorite recipe for the discard because I hate wasting it.
