Hey thanks for the note about the hiking trail you mentioned. I finally had a chance to check it out last weekend and honestly it was even better than you described. I finally tried that sourdough starter method you recommended and it's been a fun challenge. The first few days I wasn't sure I was doing it right because nothing seemed to be happening but by day five it really came to life. I've baked two loaves so far and the second one actually had a decent crumb structure. I think the temperature in my kitchen is a little cool so next time I might try keeping it in the oven with the light on to see if that helps it rise more consistently. I've been watching a bunch of videos online to pick up tips and tricks. One baker suggested using a little bit of whole wheat flour in the feedings to give the starter more character so I might try that. It's become a really nice little morning ritual checking on it and feeding it before I start my day. Let me know if you have any favorite recipes or shaping techniques. I'm hoping to get confident enough to try a boule with some 3fVBLQbv2O1Ta scored designs on top soon. I think that would look really nice for when I bake something to bring to a gathering.
