I finally watched that documentary my friend recommended about urban farming in small apartments. I was honestly surprised by how much food people can grow on a balcony with the right setup. The whole thing made me wonder if I could keep herbs alive on my kitchen windowsill. I have killed every plant I have ever owned so the odds are not great but I might try basil since it grows fast. The documentary also talked about community gardens and how they bring neighborhoods together which I thought was really nice. A few of the people interviewed said they started gardening just for fun and now they grow most of their own vegetables during the summer. That kind of dedication is impressive to me because I struggle to remember to water a single aloe plant. My friend said I should start with something easy like mint because apparently it is nearly impossible to kill. I am not sure I believe that but maybe I will give it a shot this spring. If nothing else I will have a good story about my failed gardening adventure.

I tried a new recipe last weekend for roasted vegetable lasagna and it turned out way better than I expected. The key was roasting the eggplant and zucchini beforehand so they did not get soggy in the layers. I used a bechamel sauce instead of ricotta which made everything feel lighter. My partner said it was the best lasagna I have ever made and went back for seconds twice. I found the recipe on a food blog that specializes in weeknight dinners and the instructions were really clear. The whole thing took about an hour and a half from start to finish which felt reasonable for a Sunday afternoon. I am already thinking about making it again but maybe with some mushrooms added in.
