About the sourdough question – yeah I have tried making it from scratch a few times now. The first attempt was a total disaster because I didn't let the starter ferment long enough. After about two weeks of feeding it daily it finally became active and bubbly. The key is to use filtered water and keep it in a warm spot. I started with whole wheat flour and then switched to a mix of all-purpose and rye. The flavor develops a lot more with the rye. For the actual loaf I do a series of stretch and folds over a few hours and then let it cold ferment in the fridge overnight. The scoring part is still tricky for me and I don't get those beautiful ear shapes like you see online but it tastes good and the texture is chewy. Let me know if you want me to share my feeding schedule. I also tried adding some dried herbs into the dough once and it came out pretty aromatic. Not sure if that's traditional but it worked well with soups and stews.

I have been experimenting with different hydration levels too. A higher hydration gives a more open crumb but the dough is much stickier to handle. I found that wetting my hands before handling helps a lot. Also using a Dutch oven for baking gives the best crust so far.

Regarding the camping trip we were thinking about – we looked into booking a campsite at Big Basin for late spring but most spots were already reserved. There is a first-come first-served area that we might try if we go midweek. I got a new tent that sets up much faster than the old one which makes a big difference when arriving after dark. We are planning to bring our bikes this time since there are some fire roads that are closed to cars. The last time we went we saw a family of deer near the creek in the early morning. For meals we keep it simple with pre-made foil packets that we just toss on the coals. I found that seasoning the potatoes and veggies well ahead of time helps a lot. We also bring a small stove for coffee because waiting for a campfire to brew is too slow. If you end up going that weekend maybe we can coordinate and camp near each other. Just let me know your plans when you figure them out.

I also picked up a portable hammock that packs down really small. We set it up between two trees near the picnic area and it was perfect for reading in the afternoon. The kids loved it too so we might need a second one.
