Hi there,

I wanted to follow up about the recipe testing session we discussed last week. I spent some time reviewing the technique for properly searing thick cuts and I think the key is letting the surface rest after seasoning before applying heat. I tried a few different approaches and found that a light coating of oil on both sides helped achieve a more consistent crust. The timing matters quite a bit too.

I will bring my own cast iron pan since I am more comfortable with it. We can compare results side by side and see which method yields the best texture. Let me know if you need me to pick up anything else before we meet.
