I think the main issue is timing and temperature. If you let the meat sit out for about 20 minutes before cooking, it comes to room temperature and cooks much more evenly. Also, make sure your pan is hot enough. You want a good sear on the outside to lock in the moisture. I usually pat the surface dry with a paper towel just before seasoning because any excess moisture will steam instead of sear. Salt and pepper right before it goes in, and try not to move it around too much. Let it form that nice crust before flipping. After it comes off the heat, let it rest for about five minutes so the juices redistribute. That makes a big difference in tenderness. I have been testing different rubs lately and a simple blend of coarse salt, cracked pepper, and a touch of garlic works best for most cuts. Anything too complicated overpowers the natural taste. The most important thing is not to rush the process.

We are planning to head up to the lake this weekend if the forecast holds. It looks like the weather will cooperate so we are getting the gear together. I need to check if the boat is ready to go because it has been sitting in the garage since last fall and probably needs a good cleaning and a battery check. My brother said he might join us if he can get away from work. We will probably spend the day fishing and relaxing nothing too ambitious. I am hoping we can get out on the water early before it gets too crowded. The kids have been asking to go swimming so we will bring towels and a change of clothes. Should be a nice way to spend a couple of days. We will pack sandwiches and snacks so we do not have to worry about finding a place to eat. If the weather turns we will just stay in and play cards.
