Yeah I totally agree with you about the trail conditions this time of year. I went up to the ridge last weekend and the path was pretty dry overall but there were a few muddy sections near the creek crossing. We ended up taking a longer route than planned because we missed the turn at the old oak tree but honestly it worked out better because we got to see that little waterfall that only runs after a good rain. My boots held up fine but my friend regretted wearing trail runners instead of something waterproof. Next time I'm bringing extra snacks too because we were out for nearly six hours and ran out of fuel around mile eight. The views at the top made it all worth it though. You should definitely go before the weather shifts. I'm thinking of heading back up there next month when the leaves start changing colors. It should be spectacular and a lot cooler than last time. I finally tried that pasta recipe you mentioned last week and it turned out great. I was a little nervous about the sauce because I have never been good at getting the consistency right but it came together nicely after letting it simmer for about forty five minutes. I added some extra garlic because you know I can never resist and a pinch of red pepper flakes for a little heat. My family really liked it even my picky eater finished everything on the plate. I served it with a simple side salad and some crusty bread to soak up the sauce. The whole meal came together in about an hour including prep which felt reasonable for a weeknight. I am definitely adding this one to the rotation. Thanks for sharing the recipe with me. Let me know if you have any other suggestions I should try next. I was thinking maybe something with chicken next time.
