Hey, I finally watched that documentary on ocean exploration you recommended. 5VQyDYwkbtqcK I know it took me a while, but I'm glad I did. The footage of the deep-sea vents was absolutely incredible. I had no idea those ecosystems were so full of life, completely independent of sunlight. It's wild to think we know more about the surface of Mars than we do about our own ocean floors. The part about bioluminescent creatures was my favorite, especially the jellyfish. It really makes you appreciate how much is still undiscovered right here on Earth. I started reading a book about marine biology because of it. Do you have any other recommendations in the same vein? I'm thinking of maybe checking out the BBC series next. Let me know what you think! I also love how they filmed it — the lighting and the patience required must have been immense. Anyway, thanks again for the suggestion!

Okay, so I took your advice and tried the whole sourdough starter from scratch. I have to admit, I was skeptical at first. It took about a week just to get the starter active and bubbly, and my kitchen counter was permanently covered in flour. But the first loaf I baked was actually edible! Not just edible — it was pretty good. The crust had that nice crackle to it, and the inside was soft and airy. I added some rosemary and garlic to the second batch, and it turned out even better. The whole process is way more involved than I expected, but oddly satisfying. There's something meditative about kneading dough. I think I'm going to try a whole wheat version next weekend. Have you experimented with different types of flour? Also, any tips on keeping the starter alive without feeding it every single day?
