Hey, I saw your note about the garden project. Honestly I would go with the raised bed option — it gives you better drainage and you won't have to kneel as much. I finally got around to trying that sourdough recipe you sent me last month. It took three attempts to get the hydration right but the last loaf actually had a decent crumb and the crust was really crispy. I think my starter was too young the first time. Next time I want to try adding some whole wheat flour to see how it changes the flavor. The kids ate almost the whole thing in one sitting so I guess that counts as a win. Let me know if you have any tips for shaping — mine always comes out a little lopsided. Also I ordered that bench scraper you recommended and it makes a huge difference for handling the dough. Anyway thanks again for sharing the recipe. I will probably try another variation this weekend.
