Regarding your question about the garden layout, I think going with raised beds along the south fence would give you the best sunlight through the day. The soil there drains well after rain and you won't have to worry about the walnut tree roots interfering. About that hiking route you mentioned, I think starting at the lower trailhead by the creek gives you a gentler climb and better views of the ridge. The first mile is mostly shaded which helps in the afternoon. There is a spot about halfway where the trail opens up and you can see the lake if the weather is clear. I usually pack more water than I think I need because the last stretch gets direct sun and there are no refill points. If you take the loop back instead of returning the same way, you will pass through a grove of old oaks that is really nice in the late light. The total distance is around six miles with moderate elevation gain. I did it last weekend and the footing was good overall. A few rocky sections near the top but nothing technical. You will want good grip shoes especially if it has rained recently. I can share the GPS track if that helps. Let me know what day you are thinking and I can join or give more tips.
