Yeah I totally get what you mean about the timing. We ended up going with the later slot because mornings have been chaos lately. The kids have swim practice on Tuesdays and Thursdays so we're already racing around. I think if we shift things by even thirty minutes it'll make a big difference. Honestly I wouldn't overthink it. The recipe came out great even when I substituted a few ingredients. I used Greek yogurt instead of sour cream and it was totally fine. The key is really just letting the flavors sit for a while before serving. I made it the night before and it was even better the next day. The kids asked for seconds which never happens. I'm thinking of trying it with grilled chicken next time instead of the ground beef. Might change the texture a bit but I think it'll work. Also we should plan that hiking trip soon before the weather gets too hot. The trail we did last fall was amazing and I'd love to go back. Maybe we can make a full day of it and pack a proper lunch this time instead of just snacks. I know a good spot about halfway up with a great view.
