I saw your question about the best way to propagate succulents. I've had the most luck with leaf cuttings, especially for jade plants and echeveria. Honestly, I think the key to a good sourdough starter is patience and a warm spot in your kitchen. I kept my first batch on top of the fridge and it took nearly three weeks to become reliably active. I feed it once a day with equal parts whole wheat flour and unbleached all-purpose, and bottled spring water because our tap water has too much chlorine. The smell changes over time, starting kind of like ripe fruit and eventually settling into a pleasant yogurty tang. I almost threw it out twice, but I'm glad I stuck with it. The discard crackers and pancakes are a great bonus while you wait for it to mature. I also tried a cold proofing method for the dough itself. After shaping the loaf, I put it in the fridge for about 18 hours before baking. The flavor was noticeably more complex and the crust had a fantastic deep color. I used a cast iron dutch oven preheated to 500 degrees, dropped the dough in, scored it, and baked it covered for 25 minutes, then uncovered for another 20.
