Oh, I totally get what you mean about needing a break from the city. We drove up to the Blue Ridge Mountains last weekend and it was exactly what we needed. I finally tried making sourdough from scratch after talking about it for like two years. The first attempt was a total disaster—I think I killed the starter because my kitchen is too cold. I kept it near the window and it just never bubbled. Second time around, I kept it in the microwave with the door cracked and a bowl of warm water next to it, and that did the trick. The dough itself is surprisingly forgiving once you get the hydration right. It doesn't have to be perfect. I shaped it into a boule and baked it in a cast iron pot. The crust came out super crunchy and the inside was soft with those little air pockets you see in bakery loaves. I was honestly shocked it worked. My roommate ate half of it in one sitting with butter. I've already started a second batch. It's kind of addictive, and honestly just a really fun thing to do on a weekend.
