I replied to your question about the pasta dish. The key is letting the sauce reduce slowly so it coats the noodles evenly. I used San Marzano tomatoes this time and found they give a smoother consistency without needing much adjustment. For the herbs I went with fresh basil and a pinch of oregano near the end rather than at the beginning which kept the flavor brighter. The pasta was a dried rigatoni that held up well to the sauce. I finished it with a little butter and grated pecorino right before serving. Let me know if you try it and how yours comes out. I might adjust the salt level next time depending on the cheese I use. The whole thing took about forty minutes from start to finish including prep.

I think the best approach for the weekend trip is to leave Saturday morning around eight so we miss the heavier traffic. We can take the coastal route and stop for coffee at that place near the bridge. The hike itself is about four miles round trip with moderate elevation gain. I checked the forecast and it looks clear with highs near seventy. We should pack sandwiches and plenty of water since there aren't many facilities once we start. If we finish the trail by early afternoon we could swing by the farm stand on the way back. Let me know if you want to adjust the timing or if there is a different trail you prefer. I can bring snacks and a blanket for a break at the summit. The parking area requires a small fee so bring some change.
