You asked about how to adjust the timing when roasting vegetables at a higher temperature than usual. I tested this last weekend with a batch of root vegetables and found that dropping the temp by about 25 degrees and extending the time by roughly ten minutes gave a much better result than trying to keep the original timing. The outsides were caramelized without burning and the centers were fully tender. I think the key is to keep an eye on the color rather than relying strictly on the clock. For the seasonings I used a simple mix of olive oil salt pepper and a touch of smoked paprika. That combination worked well across carrots parsnips and sweet potatoes. I also tried adding some fresh rosemary halfway through and that gave a nice aroma without overwhelming the vegetables. Let me know if you want the exact measurements I used for the oil and spice mix.

Regarding the trail you mentioned for this weekend I think it is a really good option for what we are looking for. We did a similar route about two weeks ago and the terrain was pretty consistent without any overly steep sections. The weather forecast looks favorable with partly cloudy skies and a light breeze so it should be comfortable for a longer outing. I would suggest we start around 8 in the morning to give ourselves plenty of time to take breaks and enjoy the viewpoints along the way. There are a couple of spots where the path opens up to a nice overlook that would be good for a quick stop. We should each bring at least a liter of water since there are no refill stations once we get past the first mile. I can bring a small pack with some snacks and a basic first aid kit just in case. Let me know if you want to meet at the usual parking area or if you prefer a different spot.
