Thanks for the note about the soil blend question. I ended up going with a mix of compost and peat moss for the raised beds last spring and the tomatoes really responded well. If you are considering a similar approach I would suggest adding a bit of perlite to improve drainage especially if your plot tends to hold water after a heavy rain. The squash and peppers also did better than prior years. One thing I wish I had done differently was space the cucumber mounds a bit farther apart they got really dense and made harvesting tricky. I also tried companion planting basil next to the peppers and it seemed to help with pest pressure overall. Regarding the recipe you asked about I made a few adjustments to the original method. Instead of the standard braise I tried searing the roast first on high heat then transferring it to a lower oven with the broth mixture and it came out quite tender. I added a bit of rosemary and thyme toward the end rather than at the start and the herbs retained more of their character. The vegetables I parboiled separately before adding them to the pan so they would not get overly soft. A friend suggested deglazing with a small amount of red wine before adding the stock and that added a nice depth. The whole process took about three hours but most of it was hands-off. I would recommend letting the meat rest for at least ten minutes before slicing.
