Regarding the community garden layout, I think the best option is to run the beds north to south so every row gets full sun exposure. We have enough space for eighteen 4x8 raised beds if we leave 3-foot pathways between them. For the pathways, I recommend using shredded bark instead of gravel because it is softer on the knees and breaks down into compost over time. The water system should have drip lines running to each bed with a timer at the spigot so we don't have to remember to water every day. For the tool shed placement, the southeast corner near the parking area makes the most sense because it is close to where everyone enters. I checked with the county extension office and they said we do not need a permit as long as the shed stays under 120 square feet. The soil mix they recommend is 60 percent topsoil, 30 percent compost and 10 percent perlite for good drainage. We should also install a small rain barrel system at the downspout of the shed to collect water for hand watering. The fence height needs to be at least 7 feet to discourage deer. I found a supplier that can deliver the lumber and soil by next Friday if we place the order by Wednesday. Let me know if you want me to go ahead and reserve the materials.

For the homemade pasta sauce question, I have found that starting with good crushed tomatoes makes all the difference. I usually heat 3 tablespoons of olive oil in a heavy pot and cook one finely diced onion until it is soft and translucent. Then I add 4 minced garlic cloves and stir for about 30 seconds before adding a 28-ounce can of crushed tomatoes. Season with a teaspoon of salt, half a teaspoon of black pepper and a pinch of sugar to balance the acidity. Let it simmer on low heat for at least 45 minutes, stirring every so often so it does not stick. If the sauce gets too thick, add a splash of pasta water to thin it out. I add fresh basil leaves torn by hand right at the end, not during the simmer, so the flavor stays bright. For a richer taste, stir in a tablespoon of butter just before serving. This recipe works with any pasta shape and it freezes well for up to three months. Double the batch if you want extra for later.
