The trick to getting a good sear on meat is making sure the pan is hot enough before you add anything. I usually heat the pan for a couple of minutes over medium-high heat then add oil and wait until it shimmers. The meat should be patted dry with paper towels first because moisture prevents browning. You also want to leave space between pieces so they don't steam instead of sear. Once you add the meat let it cook undisturbed for a few minutes before checking. If it sticks it probably isnt ready to flip yet. A good crust adds so much flavor to the final dish. After searing I like to finish in the oven for even cooking. Let the meat rest for a few minutes after cooking before cutting into it. Using a thermometer takes the guesswork out of doneness especially for thicker cuts. Letting it rest is the step most people skip but it makes a big difference in tenderness.

For the weekend trip I think we should leave Friday evening to beat the traffic. I can drive since my car gets good mileage on the highway. We can split the cost of gas and tolls. I was thinking we could stay at that cabin we found online it looked really nice and had good reviews. Theres a hiking trail nearby that takes about two hours and has great views at the top. We should bring snacks and plenty of water for the hike. Saturday evening we could check out the local restaurants in town. I heard theres a good brewery with live music. Sunday we can take our time exploring before heading back in the afternoon. Let me know if that sounds good or if you have other ideas. I can book the cabin if everyone agrees on the dates. The weather forecast looks clear so far which is great for outdoor plans.
