I finally got around to trying that sourdough starter everyone has been talking about. It took about ten days to get it really active and bubbly. I fed it once a day with equal parts flour and water and kept it on the counter. The first loaf I baked was a little flat but the flavor was incredible. My neighbor gave me some of her discard recipe and I made crackers that disappeared in an hour. I think the trick is letting it ferment really slowly in the fridge once it is mature. I am already planning a batch of cinnamon rolls for the weekend. The whole process is way more forgiving than I expected. I used plain bread flour and filtered water and it turned out great. Next time I want to try adding a little whole wheat to see how the flavor changes. My kitchen smells like a bakery every morning now and I honestly do not mind. fXBsHf3SXrA I have been texting my sister photos of every loaf because she got me into this. She has been maintaining her starter for two years and she says it gets easier the longer you keep it going. I believe her now because mine already feels less fussy than it did on day three. I picked up a used road bike last weekend and I have been putting miles on it every evening after work. It is a steel frame from the early 2000s and it rides so smooth compared to the aluminum bike I had before. The shifters needed a little adjustment but I watched a couple videos and figured it out. I swapped the saddle for one I already had and replaced the tires with something a bit wider for comfort. My commute is only about six miles each way but I have been taking the long route home just to stay out longer. The group ride I joined meets Saturday mornings at a coffee shop downtown. I was nervous the first time but everyone was patient and nobody dropped me. I am definitely not the fastest but I am getting stronger every week. I changed the brake pads yesterday because the old ones were worn pretty thin. I also wrapped the handlebars with new tape and it makes the bike feel fresh. I am thinking about trying a century ride later this summer if I keep building up my endurance. My friend loaned me a bike computer so I can track distance and pace and that has been motivating. I just need to keep a consistent cadence and remember to eat before long rides. I noticed my legs are starting to feel more solid and my lower back does not ache anymore after an hour in the saddle. I am still figuring out the right tire pressure for the roads around here. I started carrying a small pump and a patch kit just in case. The whole experience has been really grounding and I look forward to it every day.
