Yeah I have been keeping a sourdough starter for about six months and it really comes down to consistency with feeding and temperature. I feed mine every twelve hours at room temperature using equal parts flour and water by weight. A mix of bread flour and whole wheat gives a better flavor than white flour alone. The whole wheat seems to ferment faster too which helps with activity. Water temperature matters as well I use filtered water because chlorine can slow down the fermentation quite a bit. When it is cold the starter takes much longer to peak but in warm weather it doubles in just a few hours. I bake once a week and the crumb structure has improved steadily. The discard makes great pancakes and crackers so nothing goes to waste. I have been experimenting with different hydration levels and found that a stiffer starter produces a tangier flavor while a wetter starter gives a more open crumb. It takes patience but once you get the rhythm it becomes pretty straightforward.

The most important lesson I learned was to watch for visual cues rather than sticking to a rigid schedule. Bubbles and rise tell you more than the clock ever will. I keep a simple notebook to track feeding times and room temperature so I can adjust as needed. It is a rewarding process and the bread tastes better than anything from the store.

We are heading out on a three day hike along the coastal trail next month and I have been sorting through our gear list to make sure we do not forget anything important. The weather there changes fast so layering is going to be the key to staying comfortable. I am bringing a moisture wicking base layer a lightweight fleece mid layer and a waterproof shell for rain and wind. For sleeping I have a two person tent that packs down small and a sleeping bag rated to about thirty degrees. I am still deciding on the camp stove because it adds weight but having hot food at the end of a long day really lifts the spirits. We will need to carry enough water for stretches where there are no reliable sources so I am bringing a portable filter as backup. I have mapped out the full route and marked potential camping spots along the way. The total distance is about thirty miles spread over three days which should be manageable if we start early each morning.

I am looking forward to the ocean views and the quiet away from everything. The trail is known for wildflowers in late spring so I am hoping we catch them at their peak. We are splitting the shared gear between us so nobody carries too much weight. I still need to break in my boots a bit more before we go to avoid blisters on the trail.
