Thanks for asking about the hiking plans for next weekend. I think we should aim for the Ridge Trail since it offers the best views this time of year and it is not too crowded. The trailhead opens at 7am so if we get there by 8 we should have plenty of time to complete the loop before lunch. I checked the weather forecast and it looks clear with temperatures in the mid 70s which is perfect. We will need to bring plenty of water since there are not many refill points along the way. I also suggest we pack some sandwiches and snacks so we can take a break at the summit. Mark mentioned he might bring his camera to get some shots of the overlook. Let me know if you think we should invite anyone else or if you prefer a different trail. I can drive if needed since my car has room for four people comfortably. We should also bring a light jacket because it can get breezy at the top even when it is warm at the base.

I picked up a trail map from the ranger station yesterday and it shows a couple of alternate routes we could take if we want to extend the hike a bit. The main loop is about 5 miles but there is a connector trail that adds another two miles and leads to a small waterfall. I have not been to that part yet so it could be a nice addition if everyone is up for it. Let me know what you think and we can finalize the plan by Thursday.

I tried making that pasta dish you told me about and it turned out really well. The key was letting the sauce simmer for at least 45 minutes to get the flavors to blend properly. I used fresh basil from the garden and it made a big difference compared to dried. The recipe called for adding the cheese at the very end right before serving so it melts evenly without getting stringy. I served it with a simple side salad and some crusty bread which worked nicely. Next time I might try adding some mushrooms or bell peppers to give it more texture. The whole process took about an hour and a half from start to finish but most of that was just waiting for the sauce to cook. I will definitely make it again and maybe experiment with different herbs to see how it changes the taste.

I also wanted to ask if you have any suggestions for a good white wine to pair with this dish. I used a basic table wine this time but I think a nicer bottle could really elevate the meal. I have been trying to learn more about wine pairings lately and your recommendation last time was spot on so I trust your judgement. Let me know when you get a chance.
