I usually let the dough rest in the fridge overnight and that gives the crust a much better texture the next day. The key is to wrap it tightly so it does not dry out while it sits. Thanks for asking about the garden layout I mentioned last week. I decided to go with raised beds this year since the soil in our backyard is mostly clay and does not drain well during heavy rain. I built three beds that are each about four feet by eight feet and left enough space between them to walk through with a wheelbarrow. I filled them with a mix of compost topsoil and peat moss that I got from the landscape supply place on Maple Street. So far I have planted tomatoes peppers and cucumbers in the first bed and I will use the second one for leafy greens and herbs. The third bed I am saving for root vegetables like carrots and beets later in the season. The whole project took me about two weekends to complete including the soil mixing and watering system setup.
