We picked up some starter from a friend last week and fed it twice a day with equal parts flour and water. By day three it was doubling in size after about eight hours so we knew it was active enough to use. The first loaf we made had a nice open crumb but the crust was a little thicker than I wanted so I adjusted the oven temperature down to 450 and added a pan of water on the rack below. That helped the crust stay thinner and gave it a better chew. The key is to let the bulk fermentation go long enough at room temperature without rushing it. I usually let it rise overnight in a cooler spot and then shape it in the morning. The dough should feel pillowy and hold its shape when you score it. We have been making two loaves a week now and giving one to the neighbor who gave us the starter. She said hers is always denser so I told her to try using a little less whole wheat flour in the mix. Next time I want to try adding some sesame seeds on top before baking.

I started with a twenty gallon tank and let it cycle for about six weeks before adding any fish. The ammonia spiked around week two and then dropped after the nitrites showed up. I used a liquid test kit every other day to track the levels and did a small water change when the nitrates got above forty. Once the cycle finished I added six neon tetras and two corydoras catfish. They did well for the first month so I added a honey gourami and a few more tetras. The plants help keep the water stable and the fish seem to like having places to hide. I use a simple sponge filter and a heater set to seventy eight degrees. The light is on for about eight hours a day and I dose a little liquid fertilizer once a week. The algae has been manageable so far. If you want to try it I would recommend starting with a tank no smaller than twenty gallons because it is much easier to keep the parameters steady.
