I finally tackled the bookshelf project I told you about. Pre-drilling holes is a game-changer. I used to just try and screw directly into particle board, and it would always split. This time I measured everything three times, used a level on every shelf, and it turned out square. It took me about four hours, which is probably double what a pro would need, but I am really happy with how stable it is. I still need to sand a couple of rough edges and decide on a finish. Maybe a dark walnut stain? u55klvZoOYpS2 I also discovered that my drill's clutch settings are actually useful, not just a gimmick. Anyway, I just wanted to share my small victory. So I tried that sourdough recipe you sent me. The hydration was way higher than what I am used to, so the dough felt like pancake batter. I almost gave up and added more flour, but I went with it and did a bunch of coil folds instead of traditional kneading. The crumb turned out incredibly open and airy, maybe the best loaf I have made so far. I added rosemary and sea salt on top just before scoring, which gave it a really nice crust. My kitchen smelled amazing for hours. I am going to try a cinnamon raisin version next weekend. Let me know if you want me to save you a few slices. I think I am finally getting the hang of this fermentation thing. It is so rewarding.
