I think the black bean and corn salad would work well for the potluck next Saturday. It holds up at room temperature without any issues and doesn't require reheating. Regarding your question about the brisket preparation, I usually trim the fat cap to about a quarter inch and apply the rub the night before. The key is letting it rest in the fridge for at least eight hours so the flavors really penetrate. I have found that wrapping it in butcher paper halfway through cooking helps retain moisture without softening the bark. I cook mine at 225 degrees until it reaches an internal temperature of 203 degrees. The whole process usually takes around twelve hours for a twelve pound cut. I let it rest in a cooler for at least an hour before slicing against the grain.

This method has worked consistently well for me over the past few years. If you are short on time, you could try a higher temperature but I would not recommend going above 275 degrees. The texture changes noticeably at higher temps. Let me know if you want me to walk through the rub recipe I use.
