I think the best approach for the garden beds is to go with cedar rather than treated pine. I have built both over the years and cedar holds up much better in our climate. The initial cost is higher but you avoid any concerns about chemicals leaching into the soil. For the layout I would suggest running them north to south so each row gets even sunlight. You mentioned you wanted to grow tomatoes and peppers and those really need full sun. Raised beds about twelve inches tall work well for most vegetables and you can fill them with a mix of compost and topsoil. I usually add a layer of cardboard at the bottom to suppress weeds before filling. If you decide to go with drip irrigation which you mentioned considering I can help you set up the lines. I have extra fittings and a timer that I am not using. Let me know if you want to come by this weekend to look at my setup. I have some photos of the layout I used last year that might give you ideas for spacing. The key is to leave enough room between rows to walk and kneel comfortably.

I replied to your question about the route for the trip next month. I have driven through that area a couple of times and I think the coastal route is much more enjoyable even if it adds about an hour to the drive. The inland highway gets repetitive after a while and the views are not nearly as good. There is a small town about halfway where you can stop for lunch. I remember a diner there that makes excellent pies. If you leave by seven in the morning you will arrive with plenty of daylight to spare. I would also suggest booking the cabin for two nights instead of one. There is a trail nearby that leads to a waterfall and it is worth taking a full day to hike it. I have a decent map of the area and I can mark the spots I found worthwhile. Let me know if you want me to send over those recommendations. I also have a cooler that you can borrow for keeping food cold during the drive.
