So I decided to finally fix that squeaky door hinge in the kitchen. I thought it would be a quick ten-minute job. Just swap out the hinge pin, right? Well, the pin was completely rusted in place. I ended up having to drill it out. That turned into a trip to the hardware store. Then I realized the new pin was a slightly different gauge. So I had to file the hinge. Then the paint chipped. So I had to touch that up. What I thought was a ten-minute project ended up taking my entire Saturday afternoon. I kept telling myself it would be done in the next hour, but something new kept coming up. The door is totally silent now, so it was worth it. But I definitely learned my lesson about assuming a quick fix will actually be quick. I should have just called my dad who has every tool imaginable. He would have had it sorted in ten minutes flat.

I finally jumped on the sourdough bandwagon. I got a starter from a friend, which was supposed to be the hard part done. But keeping it alive is surprisingly stressful. I keep forgetting to feed it. And when I did remember, I used the wrong flour and it started smelling like nail polish remover. I thought I killed it. I managed to revive it, but then the first loaf I baked came out like a dense, hockey puck. The second one was better, but I accidentally over-proofed it and it collapsed in the oven. My third attempt actually looked like real bread. It had a decent ear and everything. But it was still a bit gummy inside. My family pretends to enjoy eating the results, but I have seen them sneaking slices from the store-bought loaf I keep hidden in the back. I am determined to get a perfect loaf soon. It is just such a finicky process. Temperature, humidity, timing. It feels more like a science experiment than cooking, honestly. But I am having fun with it.
