I just finished reading that article you sent about the hiking trails in North Carolina. The pictures were incredible, especially the ones from Linville Gorge. I have been trying to convince my cousin to go on a trip with me next spring, but she keeps bringing up how unpredictable the weather can be. I think that is half the fun honestly. A little rain never hurt anyone. Let me know if you have ever been there around April. I tried that new pasta place downtown you were telling me about. The one with the fresh pasta made in-house. I got the carbonara and it was honestly some of the best I have had outside of Italy. The ambiance was a little loud for my taste, but the food made up for it. We sat near the kitchen and could see them rolling out the dough. I want to try making pappardelle at home now. I saw they sell a pasta attachment for the standing mixer I have. Have you ever used one of those? I read a review that said it is tricky to get the thickness right without practice. Maybe I will just stick to buying the dried stuff for now, but eventually I would love to master fresh pasta. Anyway, thought I would share.
