I've been trying to perfect my sourdough starter this week. It's more work than I expected, but the results are starting to show. The first few loaves were pretty dense, almost like bricks. I found a really helpful video online that explained the hydration ratios better. Yesterday's loaf had a nice airy crumb and a crunchy crust.
