Yeah I totally agree with you on that point about hiking boots being overrated until you actually need them. I went up to Mount Rainier last weekend and the trail was completely different from what we expected. Lots of loose gravel and unexpected stream crossings. I just go[ r10r15 ]t back from a loop trail that took about four hours longer than we planned. The weather shifted from sunny to cold fog in about twenty minutes. I wish we had brought more layers and maybe a backup map because our phones had no signal up there. It was still a great workout but we definitely learned our lesson about being overconfident with just day packs. Next time I'm bringing extra socks and a proper rain jacket. Anyway just wanted to share that experience since we were talking about getting into more challenging terrain. Hope your next trip goes smoother than mine did.

We also stopped at that cafe near the ranger station and the coffee was surprisingly good. I was expecting instant but they had a proper espresso machine. I grabbed a sandwich for the road too and it held up well in my bag. I think we parked at the wrong lot initially because we ended up walking an extra mile just to get to the trailhead. The views were worth it though even with the fog rolling in. I managed to snap a few decent photos before my phone died. I really need to invest in a portable charger before the next outing.

So I tried that new pasta recipe you sent me last week and it turned out way better than I expected. I was a little skeptical about the sauce because it called for ingredients I don't normally keep in the pantry but I improvised a bit. I added some roasted vegetables and a bit of lemon zest to brighten it up and it really worked. The whole thing came together in about thirty minutes which is perfect for a weeknight. I paired it with a simple side salad and it felt like a proper meal. I'm actually looking forward to leftovers today which is always a good sign. Let me know if you have any other recommendations I should try. I'm on a mission to cook more at home this month and expand my go-to recipes beyond the usual rotation.

The key was really the garlic and fresh herbs I think. I used dried basil and oregano since I didn't have fresh on hand but they still gave it a nice aromatic base. I also roasted some cherry tomatoes until they burst and stirred them in at the end. That little extra step added a sweetness that balanced the acidity perfectly. I served it with a side of garlic bread I made from a leftover baguette. It would have been even better with some fresh parmesan but I only had the pre-shredded kind. Still tasted great and I felt pretty accomplished making a whole meal from scratch on a busy weeknight.
