I tried making homemade pasta from scratch this weekend and honestly it turned out way better than I expected. The recipe was surprisingly simple just flour eggs and a little olive oil. The dough needed to rest for about thirty minutes which gave me time to clean up the kitchen. Rolling it out was the most time consuming part but I found a rhythm eventually. I made fettuccine and paired it with a garlic butter sauce with some fresh parsley on top. The texture was completely different from store bought pasta much more tender and satisfying to chew. My partner was impressed which never happens with my cooking experiments. I think the secret is really just getting the hydration right in the dough. Too dry and it crumbles too wet and it gets sticky. It took me two tries to get it right but the second batch was perfect. I'm already planning to try making ravioli next weekend maybe with a ricotta and spinach filling. If you've never tried making pasta from scratch I'd definitely recommend giving it a shot.

We finally did that hiking trail we have been talking about for months. Started at sunrise to beat the heat and the crowds. The trail was about eight miles round trip with some decent elevation gain in the middle section. The first couple miles were pretty gentle through some nice wooded areas with a stream running alongside. Then it got steep for about a mile and a half which really got the heart pumping. The view from the top was absolutely worth the effort though. You could see the whole valley spread out below with the lake shimmering in the distance. We sat up there for about an hour just eating snacks and taking photos. The descent was harder on the knees than I expected but we took it slow. Saw a deer on the way back which was a nice bonus. Overall it took us about five hours including the break at the summit. Already looking forward to the next one.
