I saw your note about the potluck next Saturday. I think a hearty mushroom and barley soup would work well since it can be made a day ahead and the flavors meld overnight. I usually start by sautéing onions, carrots, and celery until softened, then add sliced cremini mushrooms and cook until they release their moisture. A bit of tomato paste adds depth before stirring in pearl barley, vegetable broth, and a couple of bay leaves. I wanted to follow up on your question about the walking trail near the old mill. I took that route last weekend and it is in good condition overall, though there are a few muddy spots after the recent rain. The full loop is about two and a half miles with a gentle incline on the eastern side. I brought binoculars and spotted a pair of red-tailed hawks near the top of the ridge. There is a bench about halfway if you need a rest, and the parking area at the trailhead has room for about eight cars. I would recommend wearing waterproof boots if you go soon. The entrance is just past the stone bridge on County Road 12. Let me know if you would like to plan a walk together one morning next week, I am free on Tuesday and Thursday before noon.
