Hey, I finally got around to tuning up my old road bike this weekend. It had been sitting in the back of the garage since last fall. It took a while to get the derailleurs adjusted just right, but now it shifts like butter. I also swapped out the brake pads for some new ones I picked up at the shop downtown. So I tried that sourdough recipe you sent me last month. The first rise took forever because my kitchen is pretty cold, but I just let it sit overnight on the counter. The scoring on top didn't come out as deep as yours, but it still got a nice ear on one side. The crumb was airy and the crust had that perfect crackle when I took it out of the oven. I ended up bringing half of it to the neighbors and they loved it. I think I am finally getting the hang of maintaining the starter. It is a lot more forgiving than I expected.
