Yeah I finally tried making homemade pasta from scratch last weekend and it turned out better than I expected. The key was really taking the time to knead the dough properly until it was smooth and elastic. I used a simple recipe with just flour eggs olive oil and a pinch of salt. Letting the dough rest for about 30 minutes made a big difference in how easy it was to roll out. I don't have a pasta machine so I used a rolling pin which took some effort but worked fine. I cut the sheets into fettuccine strips by hand. Cooking them only took about 2 minutes since they were fresh. I served it with a basic tomato basil sauce that I made while the dough was resting. Next time I want to try making ravioli or maybe experiment with adding spinach to the dough for some color. The whole process took about 2 hours but it was worth it for the texture and taste. Would definitely recommend giving it a try if you have the time.

One thing I learned is that the dough needs to be really thin before cutting otherwise the noodles come out too thick. I also found that dusting the counter with semolina instead of flour helped prevent sticking without making the dough tough. The sauce I used was just canned tomatoes crushed garlic fresh basil and a drizzle of olive oil simmered for about 20 minutes.

I've been looking into hiking options for next weekend and found a few trails that look really promising. The one I'm most excited about is a 5 mile loop through a wooded area with a small lake about halfway. It's rated as moderate difficulty so it shouldn't be too strenuous but will still feel like a proper hike. I'm planning to pack some sandwiches and plenty of water since the weather forecast looks warm.
