The garden rotation schedule really depends on what you are planting this season. I would suggest mapping out the beds first and then deciding which crops go where based on their sunlight needs. For the tomatoes, they will do best in the bed that gets the most afternoon sun. The root vegetables can go in the partially shaded area. I have found that keeping a simple log of what was planted in each bed helps a lot when planning the next cycle. For the meal prep this week I think we should keep it simple and focus on things that reheat well. I was thinking of making a large batch of lentil soup on Sunday and then portioning it out for lunches. For dinners, we could do stir-fry on Monday with whatever vegetables are left from the weekend. Tuesday I can grill some chicken and pair it with roasted potatoes. Wednesday could be pasta with a quick tomato sauce. Thursday I want to try that new grain bowl recipe. Friday we can use up any leftovers. Let me know what you think about this plan.
