Hey thanks for getting back to me yesterday about the hike. I was thinking we should definitely aim for an early start around 6 AM so we can beat the heat and see the sunrise from the ridge. The trail we talked about should be about 3.5 miles one way with moderate elevation gain. I've checked the weather and it looks clear. I'll pack some trail mix and extra water. Let me know if you want to carpool from the coffee shop on Main Street. I figure we can grab sandwiches the night before so we're not rushing around in the morning. Also I finally picked up those hiking poles we were looking at and they feel really solid. If we push a little we can also hit the overlook loop on the way back. Anyway let me know what you think. I'm flexible on the exact time but I want to be back by early afternoon. Bring a light jacket though because it might be breezy up top.

Oh and I heard from Sarah today about the book club selection. She said they're going with that mystery novel we both wanted to read so that's exciting. I already ordered my copy and it's supposed to arrive by Thursday. We could maybe do a buddy read if you're interested. I usually read a few chapters each evening so I should be done in about two weeks. Let me know if you want to swap notes as we go. She also mentioned the next meeting will be at her place and she'll have snacks so that should be fun.

I just finished that batch of granola you asked about and I think it turned out really well. I used rolled oats, honey, coconut oil, and a mix of almonds and pecans. I toasted everything at 325 for about 20 minutes and let it cool completely before breaking it into clusters. The trick is to not stir it too much while it bakes or it won't clump the way you want. I also added some dried cherries after it came out of the oven so they wouldn't burn. It's got a nice crunch and just the right amount of sweetness. Let me know if you want me to bring some over this weekend or I can leave a jar on your porch if you're busy. I'm also thinking about trying a version with maple syrup and sea salt next time. I'll keep you posted on how that one goes if you're interested in testing it out with me. The whole batch took about 45 minutes total including prep and cleanup so it's pretty quick to make on a Sunday afternoon while you're doing other things around the kitchen.

I also finally organized my pantry shelves using those stackable bins I picked up last month. It makes such a difference being able to see everything at a glance now instead of digging through bags and boxes. I labeled each bin with a chalk marker so I can change them around when I restock. I found three bags of lentils I forgot I had so I guess I'm set on lentils for a while. Next thing I want to tackle is the spice drawer because it's gotten chaotic and I keep buying duplicates. I'm thinking a tiered rack might help there. If you want to come over and see the setup I can show you what I did.
