Thanks for asking about the weekend hike plan. I looked into the Blue Ridge trail option and it seems like a solid choice for the group. The trail is about 6 miles round trip with a few moderate climbs, but nothing too strenuous for most people. I checked the weather and Saturday morning should be clear with temps in the low 70s, which should be comfortable. We could meet at the main trailhead parking lot around 7:30 AM to avoid the midday heat. I plan to bring extra water and a few light snacks to share. I tried that pasta sauce recipe you shared and made a few tweaks that worked out really well. Instead of using canned tomatoes, I roasted Roma tomatoes with garlic and a drizzle of olive oil before blending them into the sauce. The roasting brought out a natural sweetness that balanced the acidity nicely. I also added a small pinch of red pepper flakes along with fresh basil and oregano from the garden. Let the sauce simmer for about 45 minutes and the texture came out silky without being heavy. Served it over pappardelle with some roasted vegetables on the side and everyone at the table commented on how fresh it tasted. Next time I might try adding a splash of balsamic vinegar near the end for another layer of depth. Let me know if you have any other recipe ideas worth trying.
