Yeah I totally get what you mean about the weather finally turning. We had such a long winter break this year it felt never ending. By the way I finally tried that pasta recipe you sent me last month. I swapped the regular mushrooms for a mix of shiitake and oyster mushrooms and it turned out incredibly savory. The key was really letting the sauce reduce slowly on low heat while I prepped the rest. I served it with a simple side salad and garlic bread.
